Ingredients for 4 people

  • 1 kg palamita fish;
  • 280 g paccheri;
  • 300 g cherry tomatoes;
  • 1 clove of garlic;
  • 30 g chilli-flavoured Il Guastafeste EVO Olive oil;
  • 40 g L’Equilibrato EVO Olive oil;
  • Salt to taste
  • Chopped parsley to taste;

 

Procedure

  • Fillet the fish, cut into chunks and keep aside.
  • In a frying pan add L’Equilibrato EVO Olive oil and chili-flavored Il Guastafeste EVO Olive oil, a clove of garlic and all the chopped cherry tomatoes and cook, with the lid on, for about 10 minutes.
  • Add the fish and cook for about 5 minutes.
  • Boil the paccheri, pull them very al dente and toss them for about one minute.
  • Serve immediately with a sprinkling of fresh parsley.
