Ingredients for 4 people
- 1 kg palamita fish;
- 280 g paccheri;
- 300 g cherry tomatoes;
- 1 clove of garlic;
- 30 g chilli-flavoured Il Guastafeste EVO Olive oil;
- 40 g L’Equilibrato EVO Olive oil;
- Salt to taste
- Chopped parsley to taste;
Procedure
- Fillet the fish, cut into chunks and keep aside.
- In a frying pan add L’Equilibrato EVO Olive oil and chili-flavored Il Guastafeste EVO Olive oil, a clove of garlic and all the chopped cherry tomatoes and cook, with the lid on, for about 10 minutes.
- Add the fish and cook for about 5 minutes.
- Boil the paccheri, pull them very al dente and toss them for about one minute.
- Serve immediately with a sprinkling of fresh parsley.
