Polpette di carne e melanzane

Ingredients:

  • 400 g mince;
  • 2 small aubergines;
  • 5 tablespoons breadcrumbs;
  • 3 tablespoons grated Parmesan cheese;
  • 1 egg;
  • Salt;
  • Pepper;
  • Il Gentiluomo EVO Olive oil;

Procedure:

  • Cut the aubergines in half, season with a drizzle of Il Gentiluomo EVO Olive oil, salt and pepper, cover with baking paper and bake in a static oven at 180 degrees for 40 minutes.
  • Once ready, remove the peel and blend to a cream.
  • Create a homogeneous mixture by adding the mince, egg, breadcrumbs, Parmesan cheese and a pinch of salt and pepper.
  • Compose the meatballs and bread them before frying them in abundant Il Gentiluomo EVO Olive oil.
  • For a lighter version, cook in the air fryer.
